It is a highquality, unique aroma oil obtained as a result of the collection of Memecik Ata olives, which are unique to the Milas-Bafa region, between November and February, which is the full ripening period, and carefully pressed daily at 35-40 degrees, while still fresh. Its quality has been approved by the European Union and has received a Geographical Indication.

Its acid ratio is between 0,4 and 0,7 . It leaves a slight bitterness on the tongue and a burning sensation around the back of the throat, which is  an indication of its freshness.
